Hazelnut Encrusted Halibut

  • One 6-8 ounce halibut piece
  • 1/4 cup hazelnuts, chopped
  • 2 tablespoons olive oil
  • 1 ounce hazelnut liqueur
  • 1/2 cup water

Heat oil in a small saute pan. Roll halibut in hazelnuts to thouroughly coat. Place halibut into oil, skin side up, and saute approximately one minute. Turn and saute on the other side for one minute. Deglaze pan with hazelnut liqueur and then add water. Place whole pan in 400 degree oven until fish is tender, approx. 7-10 minutes.
