Walleye Sauteed in Hazelnut Crust

- 6 Walleye fillets, boned and skinned, 6-8 oz. each
- Salt and pepper to taste
- Flour
- 3/4 cup fresh bread crumbs
- 3/4 cup finely ground hazelnuts
- 1 egg, beaten with 2 tablespoons milk
- 1/2 cup clarified butter
Preheat oven to 350 degrees. Preheat 2 large skillets to meduim hot. Mix hazelnuts with breadcrumbs. Season and dust fish with flour. Dip it in the beaten egg, then coat with hazelnut and crumb mixture on both sides. Shake excess crumbs off.
Heat the butter in pans, place fish in. Brown nicely on one side, turn and brown the other side. Transfer fish to a cookie sheet, place intthe oven for about 3 minute. Serve with lemon wedges if desired.
To make clarified butter, place it in a tall pot over moderate heat and cook until it stops bubbling, then pour it into another container.
