Cranberry Hazelnut Coleslaw

  • 1 medium sized green cabbage head
  • (about 10 cups)
  • 2 carrots, coarsely grated or chopped
  • 1/4 cup chopped onions (sweets work best)
  • 1/2 cup roasted hazelnuts (coarsely chopped)


  • 1/2 cup mayonnaise
  • 1 tablespoon olive oil
  • 1/2 cup water
  • 1 tablespoon vinegar
  • 1 teaspoon black pepper
  • 4 tablespoons honey cranberry mustard (this is the ingredient that sets this recipe apart. Made by Beaverton Foods, Beaverton,Or. Sold in stores as Beaver Brand)

In a large bowl, combine the cabbage, carrots and onions. In a measuring bowl whisk together all of the dressing ingredients. Add the dressing to the slaw mix, then add hazelnuts. Toss to coat. If you want more zing, add more of the mustard. Chill for an hour.
